Weird Flex-Dry Hopped Sour 5.5%

This beer starts with a grist that is similar to our White beer (heavy on raw wheat) but that’s where the similarities end. Once we extract the sugar from the grain, and the wort is in the kettle, we sour it overnight with a pure pitch of lactobacillus.

The next day we boil the wort and transfer it to the fermenter with yeast for fermentation, followed by heavy dry hopping with Galaxy and Sabro hops. Sabro has a distinct coconut element, and Galaxy is known for potent passionfruit aroma.
