Himalaya • White IPA • $3.98 • Hybrid witbier/IPA with orange peel, coriander and a massive amount of Simcoe hops. Fermented with our distinctive Belgian witbier yeast which adds an undertone of clove. (6.3%)
Glint • Table Beer • $3.32 • Zesty and refreshing, this saison is perfect after a day outdoors on the escarpment. Gently dry hopped with Hallertau Blanc from Germany, it features vibrant lemongrass and honeydew melon character with a background note of gooseberry.(3.8%)
Stones • Blended Foeder Saison With Apricot • $7.97 • In late August, our foeder beer had taken on a stone fruit character with a slight vanilla note… the perfect background to showcase apricots. We added 700 pounds of them to a 75/25 blend of foeder beer with a light, fresh saison before refermenting. The result is a dry, fruit-forward beer with a gentle acidity and layers of subtle flavour. Passion In Paradise • Saison• $7.08 • Our first two batches brewed at 40 Simcoe Street were fermented with a classic Belgian saison yeast before being transferred to our American oak foeder for long-term aging. When the time was right, we loaded this beer with passionfruit, which contributed a delightful acidity and balanced tannins from the oak with a ripe tropical zing. (6.3%)
